Homemade Green Noodles
1 1/3 cups of flour
1 1/2 teaspoons of salt
1/3 cup of frozen chopped spinach
2 eggs
2 teaspoons of olive oil
4 cups of water
1 tablespoon of oil
Melted butter
Freshly grated Parmesan cheese
Combine the flour and 1/2 teaspoon of salt in mixing bowl; form a well in
center of flour mixture.
Cook spinach according to package directions; drain and press dry in sieve.
Combine eggs, olive oil, and spinach; blend until smooth. Add to dry
ingredients, stirring to form very stiff dough. Add small amount of water if
necessary. Knead dough until smooth and elastic. Cover and let rest for 30
minutes.
Divide dough into 4 equal parts; roll out until paper thin on floured
surface. Cut into strips and let dry on lightly floured surface for 1 hour.
Place water and 1 teaspoon of salt in large saucepan and bring to a
boil. Float oil on surface and boil pasta for 5 to 7 minutes, until just
tender; drain.
Toss noodles with melted butter and Parmesan cheese, serve at once. Serves 6
