| Shrimp With Orzo (5.5 Pts)
28 ounces of tomatoes, canned diced and undrained 1 1/2 teaspoons of olive oil 1 cup of onion, diced 3 cloves garlic, minced 1/4 cup of dry white wine 3 tablespoons of parsley, fresh chopped, divided 1 tablespoon of capers 1/2 teaspoon of oregano 1/2 teaspoon of basil 1/4 teaspoon of pepper 1 dash of crushed red pepper 1 pound of shrimp, medium, peeled and deveined 2 cups of orzo, hot cooked, about 1 cup uncooked Cooking Spray 1/2 cup of feta cheese, crumbled |

Preheat oven to 450ºF. Drain tomatoes through a sieve into a bowl, reserving tomatoes and 1/2 cup tomato liquid. Heat oil in a large nonstick skillet over medium heat. Add onion and garlic; saute 3 minutes. Add wine. Cook 1 minute. Add tomatoes, reserved tomato liquid, 1 1/2 tablespoons parsley, capers and next 4 ingredients to pan. Cook 5 minutes. Add shrimp and cook 2 minutes. Stir in pasta. Spoon shrimp mixture into an 11 x 7 inch baking dish coated with cooking spray. Top with feta cheese and 1 1/2 tablespoons parsley. Bake at 450ºF. for 10 minutes.
Yield. 4 servings. Serving size 1 1/2 cups
