Old Fashioned Pasta w/Fresh Tomatoes & Artichoke Hearts

For each serving
1 medium ripe tomato, peeled, seeded and diced
2 cooked artichoke hearts, cut in half
1 teaspoon of oregano
1/2 teaspoon of basil
1 garlic clove, crushed in a garlic press
salt and pepper to taste
1 tablespoon of wine vinegar
3 tablespoon of olive oil
1/2 cup of macaroni, cooked according to package directions
Mizithra cheese, cut in slices, for garnish
Kalamata olives for garnish

Combine all ingredients except macaroni and garnishes in a bowl. Cover and marinate several hours. Turn macaroni onto a plate. Cover with marinated mixture. Garnish with cheese and olives. Serve cool.
