Herbed Penne
2 teaspoons of olive oil
3 teaspoons of chopped onion
1 clove garlic, peeled and minced
one 3 ounce can of tomato paste
1/4 teaspoon of cayenne pepper
1/2 teaspoon of oregano
1/2 teaspoon of marjoram
1 tablespoon of chopped parsley
1 cup of water
1 pound of penne
Heat oil in saucepan. Add onion and sauté until translucent. Add garlic and
sauté for 1 minute longer. Add tomato paste to pan 2 tablespoons at a time,
stirring constantly. Add cayenne pepper, oregano, marjoram, parsley, and
water. Mix well, then simmer while pasta cooks.
Cook penne in boiling, salted water until just tender, following package
directions; drain.
Toss pasta and sauce together, serve at once. Serves 8 |
