Penne w/Asparagus Tips
3 tablespoons of olive oil
1 large clove garlic, peeled and halved lengthwise
3 anchovies, finely chopped
one 14 ounce canned peeled tomatoes, drained and coarsely chopped
4 cups of fresh asparagus tips
4 ounces of penne
Salt and pepper to taste
Heat olive oil in saucepan. Add garlic, anchovies, tomatoes, and asparagus;
cover and cook over medium heat for 15 minutes.
Meanwhile, cook penne in boiling, salted water following package directions;
drain and keep warm in covered, heated serving dish.
Season vegetables with salt and pepper; mix with pasta in serving dish.
Cover dish for 3 minutes for flavors to blend, then serve. Serves 4 |
