Penne w/Creamed
Artichokes
12 ounces of penne
1 cup of cooked frozen artichoke hearts
1 cup of cream cheese, softened
2 tablespoons of olive oil
salt and pepper to taste
Cook penne in boiling, salted water until just tender, following package
directions; drain, reserving cooking water.
Pass artichokes through sieve or puree in blender or food processor. Soften
cream cheese over hot water, then beat until smooth and creamy. Slowly blend
in olive oil and season with salt and pepper. Mix in artichoke puree.
Gradually stir in enough pasta cooking water to make cheese sauce smooth and
creamy.
Place pasta in heated serving dish. Add cream sauce, mixing well. Serve at
once. Serves 4 |
