Penne w/Sauce Amatrice
2 tablespoons of olive oil
2 cloves garlic, peeled and minced
1/4 pound of salt pork, diced
1 small onion, chopped
1/4 cup of dry white wine
one 28 ounce can of Italian style tomatoes, drained and minced
1 teaspoon of sugar
1 teaspoon of chili powder
1/2 teaspoon of paprika
1/2 teaspoon of basil
1/2 teaspoon of oregano
salt and pepper to taste
12 ounces of penne
freshly grated Parmesan cheese
Heat oil in large saucepan. Add garlic, salt pork, and onion. Sauté until
onion is tender. Add wine; cook until wine evaporates. add tomatoes and
spices. Simmer for 20 minutes.
Meanwhile, cook penne in boiling, salted water following package directions;
drain.
Place penne in heated serving bowl. Top with sauce, sprinkle with grated
Parmesan cheese and serve. Serves 4 |
