Penne w/ Savory Pork
1 1/2 pounds of boneless pork, diced
2 large onions, chopped
2 tablespoons of peanut oil
1 clove garlic, peeled and chopped
1/2 tablespoon of lemon juice
3 large ripe tomatoes, peeled and chopped
1/4 teaspoon of chili sauce
1 teaspoon of sugar
1 1/2 tablespoons of Worcestershire sauce
Salt and pepper to taste
12 ounces of penne
1 cup of grated Cheddar cheese
1/2 cup of salted peanuts
Brown pork and onions together in oil. Add garlic and lemon juice; stir
well. Add tomatoes, chili sauce, sugar, Worcestershire sauce, salt and
pepper. Simmer for 15 to 20 minutes or until pork is tender and thoroughly
cooked.
Meanwhile, cook penne in boiling salted water following package directions;
drain.
Just before serving, stir grated cheese and peanuts into pork mixture. Heat
until cheese is melted. Place penne in heated serving dish. Top with pork
mixture, toss well and serve. Serves 4 |
