Smoked Chicken, Pasta & Sun Dried Tomatoes
two 10 1/2 ounce cans of chicken broth
2 cups of water
6 ounces of penne pasta
3/4 cup of sun dried tomatoes
1 1/2 cups of boiling water
Olive oil flavored vegetable cooking spray
1 cup of chopped green pepper
1/2 cup of chopped onion
1 clove garlic, minced
1 tablespoon of margarine
1 1/2 tablespoons of all purpose flour
1 cup of milk
8 ounces of smoked chicken breasts, cubed
2 tablespoons of chopped fresh basil
1/3 cup of grated Parmesan cheese
Bring chicken broth and 2 cups of water to a boil in a large
saucepan, add pasta, and cook 10 to 12 minutes or until tender. Drain
and set aside. Place sun dried tomatoes in a shallow dish. Pour boiling
water over tomatoes, and l et stand 10 minutes. drain tomatoes, and
chop.
Coat a nonstick skillet with cooking spray. Place over medium high heat
until hot. Add chopped tomato, green pepper, onion, garlic, sauté until
vegetables are tender. Set aside, and keep warm. Melt margarine in a
large saucepan over low heat. Add flour, and cook, stirring constantly
with a wire whisk, 1 minute. Gradually add milk, stirring constantly.
Cook, stirring constantly, until thickened and bubbly.
Add pasta, tomato mixture, chicken and basil, stirring well. Cook until
thoroughly heated, stirring frequently. Transfer to a serving bowl,
sprinkle evenly with Parmesan cheese. Makes 6 servings
Smoked chicken breast can usually be found in the deli department of
supermarkets or specialty grocery stores. |
