| Gemelli with Feta, Mint & olives
16 ounces of Gemelli or penne 4 ounces of Feta cheese, crumbled 1/2 cup of Kalamata olives, sliced 1/2 cup of Mint leaves, chopped 2 tablespoons of extra virgin olive oil 1 tablespoon of lemon juice 18 teaspoons of ground black pepper 1 ounce of fresh spinach, stems |
| In a large saucepot, prepare pasta as label directs. Meanwhile combine cheese, olives, mint, olive oil, lemon juice and pepper. Drain pasta, return to pot, Add the cheese mixture and spinach; toss well.
