Pasta with Collards and Sausage
1 pound of spicy smoked sausages, sliced
one 8 ounce package of sliced fresh mushrooms
2 cloves garlic, minced
3 tablespoons of olive oil
two 10 ounce packages of frozen chopped collard greens, thawed and well
drained
1 tablespoon of dried Italian seasoning
two 14 1/2 ounce cans of chunky Italian seasoned tomatoes, undrained
1 pound of penne or rigatoni, cooked
Freshly grated Parmesan cheese
Brown sausage in a Dutch oven; remove from pan, drain on paper towels, and
discard drippings. Set Sausage aside.
Wipe drippings from Dutch oven with a paper towel.
Cook mushrooms and garlic in olive oil in Dutch oven over medium heat,
stirring constantly, until mushrooms are tender. Add sausage, collard
greens, Italian seasoning, and tomatoes. Cook 10 minutes.
Add pasta, and toss well. Serve with grated Parmesan cheese. Yield 8
servings
