Beef Noodle Salad
1 pound of fresh Chinese noodles
5 tablespoons of sesame oil
3 tablespoons of vinegar
Salt and pepper to taste
2 tablespoons of soy sauce
1 teaspoon of sugar
1/2 pound of cooked beef, cut into 1/4 inch cubes
2 cups of soybeans
1/2 cup of sliced radishes
4 scallions, thinly sliced
Cook noodles in boiling, salted water until just tender, following package
directions; drain.
Mix oil, vinegar, salt, pepper, soy sauce and sugar together; mix with
noodles. Add beef and soy beans to noodles. Sprinkle radishes and scallions
on top and serve. Serves 8 |
