Cheese & Macaroni Salad Ring
1 cup of elbow macaroni
1/4 cup of French dressing
2 cups of cottage cheese
1/4 cup of diced pimento
1/4 cup of diced green pepper
2 tablespoons of chopped parsley
Lettuce
Sliced green olives, to garnish
Cook macaroni in boiling, salted water until tender, following package
directions; drain. Add French dressing to warm macaroni and mix well.
Refrigerate until chilled.
Add cottage cheese, pimento, green pepper, onion and parsley to macaroni.
Press into quart ring mold and refrigerate for several hours.
To serve, arrange lettuce on platter. Loosen macaroni mixture from side of
mold with knife; turn out onto lettuce. Garnish with olives. Serves 8 |
