Chicken Salad w/Cellophane Noodles
2 whole chicken breasts, fried or stewed
2 tablespoons of hot water
1 teaspoon of dry mustard
1 tablespoon of sesame seeds
1/3 teaspoon of salt
2 teaspoons of sugar
1 cup of chopped watercress, optional
4 scallions, chopped
8 ounces of transparent (cellophane) noodles, fried
1/3 head lettuce, shredded
Italian salad dressing to taste
Remove skin and bones from chicken breasts; cut chicken meat into small
pieces and set aside.
Combine hot water and mustard to form paste. Toss chicken with paste. Add
sesame seeds, salt, and sugar, toss again. Add watercress if desired,
scallions, noodles and lettuce.
To serve, add salad dressing and toss to mix well. Serves 4 |
