Gorgonzola & Ham Salad
8 ounces of spaghetti
3 to 4 tablespoons of vinegar
a pinch of salt
a pinch of sugar
a pinch of pepper
1/4 cup of virgin olive oil
1 1/4 cups of gorgonzola cheese
6 ounces of smoked ham, cut into thin strips
10 pitted black olives, halved
1/2 cup of fresh basil leaves
1/4 cup of chopped pistachio nuts
Cook the pasta in boiling, salted water until just tender, following package
directions; drain and set aside to cool.
Mix vinegar, pinch of salt, sugar, pepper and oil together in bowl.
Mix pasta with cheese, ham, olives, and basil. Pour dressing on top and toss
well; let stand for 30 minutes. Sprinkle with pistachio nuts, and serve.
