Ham & Cheese Pasta Salad
1 1/2 cups of pasta shells
2 cups of diced cooked ham
1 cup of diced Cheddar cheese
1/2 cup of diced celery
1/2 cup of corn oil
2 tablespoons of lemon juice
1 teaspoon of Dijon mustard
1/4 cup of plain yogurt
1/4 cup of chopped scallions
1/2 teaspoon of tarragon
Salt and pepper to taste
1 cup of frozen peas, thawed
1/4 cup of minced parsley
Cook the pasta in boiling, salted water until just tender, following package
directions; drain.
Toss ham, cheese, celery, and pasta together in bowl. Blend oil lemon juice,
mustard, yogurt, scallions, tarragon, salt and pepper together in blender or
food processor; pour over past mixture. Cover and refrigerate for at least 1
hour.
Just before serving, mix peas and parsley into salad. Serves 4 |
