Hot Macaroni salad
8 ounces of macaroni
6 slices of bacon, diced
2 tablespoons of vinegar
1 tablespoon of finely chopped onion
salt and pepper to taste
1/3 cup of mayonnaise
1/2 cup of radishes
1/4 cup of chopped green pepper
1/4 cup of chopped parsley
Cook macaroni in boiling, salted water until just tender, following package
directions; drain.
Cook bacon in frying pan until crisp; drain on paper towels. Discard all but
1 tablespoon of bacon fat from pan. Add vinegar, onion, salt, and pepper to
pan and heat to boiling point. Remove from heat.
Combine macaroni and all remaining ingredients in vinegar mixture. Serve
hot. Serves 5 to 6 |
