Italian Pasta Salad
1 pound of mixed white and green pasta twists
1 pound of cooked veal roast, diced
2 tablespoons of capers
2 tablespoons of pine nuts
2 pounds of tomatoes, skinned and diced
1/2 cup of mayonnaise
1 teaspoon of basil
2 tablespoons of red wine vinegar
2/3 cup of yogurt
salt and pepper to taste
Cook pasta in boiling, salted water until just tender, following package
directions; drain.
Combine veal with capers, pine nuts, tomatoes, and pasta. Mix mayonnaise,
basil, vinegar, yogurt, salt and pepper together. Toss pasta salad with
dressing. Cover and refrigerate until ready to serve. Serves 8 |
