Macaroni Cheese Salad
2 cups of macaroni
2 tablespoons of butter
1 cup of diced Cheddar cheese
1 cup of sliced dill gherkins
1/2 cup of very finely chopped onion
2 cups of frozen peas
1/2 cup of mayonnaise
salt and pepper to taste
Shredded lettuce
Cook macaroni in boiling, salted water until just tender, following package
directions; drain. Add butter and toss lightly. Add cheese, pickles and
onion to macaroni.
Cook peas according to package directions; drain and let cool. Add peas to
pasta mixture.
Stir mayonnaise into paste mixture, making sure the macaroni is well mixed
with mayonnaise. Season with salt and pepper. Refrigerate until well
chilled. Serve on a bed of shredded lettuce. Serves 6 |
