Pasta Salad w/Peas & Corn
1 pound of penne
1/2 cup of chopped parsley
1/2 cup of chopped fresh chives or basil
4 teaspoons of vinegar
Salt and pepper to taste
1/2 teaspoon of paprika
A pinch of garlic powder
5 tablespoons of oil
2 1/4 cup of cooked peas
1 red pepper, seeded and diced
1/2 pound of cooked ham, diced
2 1/4 cups of canned sweet corn, drained
2 hard boiled eggs, shelled and cut into eighths
1/4 cup of sliced radishes
Cook penne in boiling, salted water until just tender, following package
directions; drain.
Set aside 1 tablespoon of chopped herbs, then mix remaining herbs with
vinegar, salt, pepper, paprika, garlic powder, and oil.
In a large salad bowl, mix pasta, peas, diced red pepper, ham, corn, and
half the radishes together, add dressing, tossing well. Place eggs and
remaining radish slices on top. Sprinkle with reserved tablespoon of chopped
herbs and serve. Serves 8 |
