Pasta Salad with Spring Vegetables
8 ounces of pasta twists
1/4 cup of vinegar
salt and pepper to taste
a pinch of curry powder
1 small onion, grated
1 clove garlic, peeled and crushed
1/4 cup of oil
1 small cucumber, peeled and sliced
1 green pepper, seeded and sliced
2 tomatoes, cut into eighths
1 kohlrabi, peeled and cut into thin strips
1/2 pound of cooked beef sausage, diced
1/2 cup of chopped parsley
watercress, for garnish
Cook pasta in boiling, salted water until just tender, following package
directions; drain.
Mix vinegar, salt, pepper and curry together. Add grated onion, crushed
garlic, and oil. Combine pasta, cucumber, green pepper, tomatoes, kohlrabi,
and sausage in salad bowl. Add oil vinegar mixture, toss well. Sprinkle with
chopped parsley.
Serve salad garnished with watercress sprigs. Serves 6 |
