Whole Wheat Pasta & Fruit Salad
10 cardamom seeds
2/3 pound of whole wheat pasta twists
2 ounces of roasted sesame seeds
2/3 cup of heavy whipping cream
1/4 cup of lemon juice
2 tablespoons of soy sauce
2 tablespoons of sesame oil
2 to 3 teaspoons of curry powder
1/2 teaspoon of Indian saffron, optional
1/2 teaspoon of pepper
1 pineapple, peeled, cored, and diced
6 bananas, peeled andsliced
3 tablespoons of chopped chives
Make an incision in cardamom seeds. Place cardamom in large saucepan of
boiling, salted water; add pasta and cook until tender, following package
directions, drain and let cool.
Place sesame seeds in single layer on baking sheet and toast in 350ºF. oven
for 20 minutes.
Blend cream, lemon juice, soy sauce, oil, curry powder, saffron if desired
and pepper together. Combine pasta, dressing, pineapple, bananas, sesame
seeds and chives. refrigerate for 15 minutes or until ready to serve. Serves
