Takko Mein Soup

Takko Mein Soup

1/2 cup of warm water
6 dried Chinese mushrooms
8 cups of water
1 teaspoon of salt
1 teaspoon of oil
1 cup of fresh Chinese noodles
4 cups of chicken broth
2 ounces of lean uncooked ham, cut into thin strips
1 1/4 inch piece of fresh ginger, peeled and finely grated
salt to taste

Pour warm water over dried mushrooms and leave to soak for 30 minutes. Drain and thinly slice mushrooms. Place water, salt, and oil in large pot and bring to a boil. Add noodles and cook for 8 minutes, drain noodles and cover to keep warm. Bring chicken broth to a boil in large saucepan. Add ham strips and simmer for 5 minutes. Stir in spinach, drained mushrooms, and oysters with can liquid. Simmer for 2 minutes. Add noodles and  grated ginger, cook until heated thoroughly. Season with salt and serve. Serves 4
