Beef Noodle Soup
1 1/4 pounds of beef short ribs
1 tablespoon of salt
6 cups of water
2 beef bouillon cubes
1 cup of chopped celery with leaves
4 ounces of egg noodles
Combine the beef, salt and water in a large pot. Simmer covered, for 2
hours or until the meat is tender, skin off excess fat. Remove meat from
bones and cut into small pieces. Add bouillon, celery, and cut up meat
to broth. Cover and simmer for 10 minutes. Stir in noodles, cover, and
simmer for 7 - 10 minutes or until noodles and celery are tender. If a
thinner soup is desired, add a little hot water to broth. Spoon soup
into individual soup bowls and serve. Serves 6 |
