Cabbage & Bean Thread Soup

2 ounces of pork, thinly sliced into small pieces
1 1/4 teaspoons of soy sauce
1 teaspoon of cornstarch
1/2 ounce of transparent (cellophane) noodles
2 tablespoons of oil
1 teaspoon of salt
3 cups of water
1/4 cup of thinly sliced  Chinese cabbage
1/2 cup of thinly sliced cucumber
1 tablespoon of chopped scallion
1/4 teaspoon of pepper
1/2 teaspoon of sesame oil

Mix pork with 1 teaspoon of soy sauce and cornstarch. Set aside. Place noodles in bowl with just enough water to cover, let stand for 5 minutes. Heat oil in frying pan. Sauté pork over moderate heat for 5 minutes, remove from pan. Add salt and water to large saucepan, bring to a boil. Add noodles, pork, cabbage and cucumber, and boil for 5 minutes. Mix scallion, pepper, sesame oil and remaining 1/4 teaspoon of soy sauce together, add to soup, mixing well. Simmer until soup is thoroughly heated and serve. Serves 6
