Sicilian Sausage Soup w/Orzo
1/4 pound of sweet Italian sausage with casing removed
1/2 cup of finely chopped onion
1/4 cup of chopped peeled carrots
1/4 cup of chopped celery
2 tablespoons of chopped parsley
one 16 ounce can of Italian style tomatoes, drained and broken up with a
fork
one 13 3/4 ounce can of chicken broth
1/2 teaspoon of basil
1/4 cup of rice shaped pasta (orzo)
salt and pepper to taste
Brown sausage in medium frying pan, breaking it into small pieces as
it cooks. Remove sausage from pan with slotted spoon. Place into large
saucepan. Add onion to same frying pan and sauté in sausage drippings
until translucent. Remove onion slotted spoon and add to sausage. Add
vegetables, chicken broth and basil to sausage mixture. Bring soup to a
boil, stir well. Cook over moderate heat for 15 minutes. Stir in orzo,
salt and pepper. Reduce heat to low, cover and simmer for 20 minutes or
until sausage is done and orzo is tender. Spoon onto soup bowls and
serve. Serves 4 |
