Tortellini in Gorgonzola Mayonnaise

Tortellini in Gorgonzola Mayonnaise

1 pound of tortellini of your choice
1/2 cup of olive oil
Juice of 1/2 lemon
1/2 of red onion, sliced in rings
1/2 cup of chopped red pepper
1/2 pound of gorgonzola cheese
salt and pepper to taste
1/2 cup of mayonnaise
1/2 cup of sour cream
Parsley for garnish

Cook tenderloin in boiling, salted water until just tender, following package directions, drain. Combine the olive oil, lemon juice, onion and sweet pepper, toss with hot tortellini. Crumble half the cheese and mix with tortellini. Let cool. Season with salt and pepper. Mash the remaining cheese and combine with mayonnaise and sour cream. Toss with tortellini. Serve immediately, garnished with parsley.
