Apricot Stuffed Pork Chops

one 6 ounce package of dried apricots, coarsely chopped
1 cup of water
1/4 cup of chopped walnuts
2 tablespoons of sugar
2 tablespoons of butter or margarine
1/4 teaspoon of ground ginger
1/4 teaspoon of ground cinnamon
six 1 1/4 inch thick pork chops, cut with pockets



Combine apricots and water in a saucepan, bring to a boil. Reduce heat, and simmer, uncovered, 5 minutes. Drain. Combine the apricots, walnuts, sugar, butter, ginger, and cinnamon in a medium mixing bowl, stir well. Stuff pockets of pork chops with apricot mixture. Place pork chops 5 to 6 inches from low to medium coals, grill 30 - 35 minutes, turning frequently. Remove pork chops to individual serving plates. 6 servings

Note: To make a pocket in a pork chop, cut into the chop with a small sharp knife on the rib side, parallel to the surface of the chop. Be careful not to cut through the opposite side.
