Barbecued Style Pork Chops
4 pork chops, about 1 pound
4 lemon slices
4 onion slices
1/2 cup of tomato juice
1/4 cup of catsup
1 tablespoon of brown sugar
1 tablespoon of vinegar
1 teaspoon of Worcestershire sauce
1/4 teaspoon of chili powder
Arrange chops on a single layer in a shallow baking dish. Cover chops
with lemon and onion slices. Bake, uncovered, at 450ºF. for 10 minutes.
In a small saucepan, combine tomato juice, catsup, brown sugar, vinegar,
Worcestershire and chili powder. Bring to a boil. Drain chops,
pour sauce over all. Reduce oven temperature to 375ºF. Continue baking
chops, uncovered, for 40 to 45 minutes or until tender. Baste
occasionally with sauce. Makes 4 servings
