Pork Chops >


Fruit Topped Pork Chops

1 tablespoon of reduced calorie margarine
1/4 cup of chopped celery
2 tablespoons of chopped onion
1 cup of herb seasoned stuffing mix
three 0.9 ounce packages of mixed dried fruit
2 tablespoons of raisins
six 4 ounce lean, boneless center cut loin pork chops, 3/4 inch thick
1/4 teaspoon of salt
1/4 teaspoon of pepper
1/4 cup of all purpose flour
vegetable cooking spray
1/2 cup Chablis or other dry white wine



Melt margarine in a large skillet; add celery and onion; cook stirring constantly until tender. Add stuffing mix, mixed dried fruit, and raisins; toss gently. Set aside.
Sprinkle pork chops with salt and pepper, dredge in flour. Set aside.
Coat a large nonstick skillet with cooking spray; add chops and brown on both sides over medium heat.
Arrange  chops in an 11x7x 1/12 inch baking dish coated with cooking spray, top each with fruit mixture. Add wine to dish. Cover and bake at 350ºF. for 40 to 45  minutes or until done. Yield 3 servings
