Grilled Dijon Pork Chops
2 tablespoons of Dijon mustard 1 teaspoon of dry mustard 1 teaspoon of salt 1/2 teaspoon of pepper, freshly ground 4 - 6 pork chops 3 tablespoons of butter, softened
Make a paste of the mustards, salt and pepper and 2 tablespoons of butter. Rub into chops. Grill chops over a very hot charcoal fire for 4- 6 minutes on each side.
Place each chop on a square of foil and brush with a little butter. Wrap each chop and return packets to grill for 10 minutes. Brush chops with herb butter and serve.
Herb butter: 2 tablespoons of butter, softened 1 tablespoon of parsley, finely chopped 1 tablespoon of chives, finely chopped 1/2 teaspoon of lemon juice salt and pepper
Combine all ingredients and brush on chops.
