Fashioned Neapolitan Pork Chops
2 tablespoons of olive oil
1 clove garlic, minced
6 pork rib or loin chops, cut about 3/4 to 1 inch
thick
1 teaspoon of salt
1/4 teaspoon of pepper
1 pound of mushrooms, cleaned and sliced
2 green peppers, cleaned and chopped
1/2 cup of canned tomatoes, sieved
3 tablespoons of dry white wine
Heat oil in a large, heavy skillet. Add garlic and cook
until lightly browned.
Season chops with salt and pepper. Put chops in skillet and
brown on both sides.
Add mushrooms, green pepper, sieved tomatoes, and wine.
Cover and cook over low heat about 1 hour or until tender. 6
