Pan Cooked Pork Chops with Sherry Sauce
6 loin pork chops
2 onions, peeled and cut fine
one 6 ounce can of chopped mushrooms
one 6 ounce can of tomato sauce
1/4 cup of chopped cooked ham
1/4 cup of chopped cooked tongue
1/4 cup of dry sherry
1 teaspoon of salt
grind of black pepper
paprika
Major Grey's Indian Chutney for garnish
Brown chops on both sides in large heavy skillet over high heat. Reduce
heat. Cover skillet. Cook slowly abut 25 minutes or until almost done.
Add onions. Cook 5 minutes, stirring onions in the pan fat. Add drained
mushrooms, tomato sauce, and chopped meats. Mix with fat in pan. If pan
mixture seems dry, add small amount of tomato sauce blended with hot
water. Stir into pan. Cover and cook 5 minutes. Add sherry, salt, and
pepper. Mix. Spoon all over chops. Cover pan and continue to cook 3
minutes. Serve on hot platter. Add light sprinkle of paprika and garnish
of Major Grey's Indian Chutney. Makes 6 servings |
