Pepper Rubbed Pork Chops
4 thick pork loin chops
1 teaspoon of ground cumin
1 teaspoon of salt
black pepper, coarsely crushed
white pepper, coarsely crushed
2 teaspoons of ground coriander seeds
4 cloves garlic finely chopped
2 tablespoons of olive oil
Large pinch cayenne pepper
Heat broiler. Stir together cumin, salt,
black and white peppers, cayenne pepper, coriander, garlic, and olive oil in
small bowl until well mixed. Rub on both sides of chops. Broil pork chops,
turning once, until crispy on the outside and chops are done. Yields: 4
