Holland Pork Chops w/Apricots

4 thick pork chops
1/4 teaspoon of powdered ginger
1 teaspoon of salt
freshly ground black pepper
2 tablespoons of butter
2small onions, finely chopped
1 teaspoon of tomato paste
1/2 cup of red wine
8 canned apricot halves
3 tablespoons of fine dry breadcrumbs
1 tablespoon of butter



Season the chops with ginger, salt and pepper. Fry the chops in the butter over high heat until evenly browned. Place the chops in an ovenproof dish and surround with the chopped onions. Discard the fat from the frying pan and add the tomato paste and wine. Pour this mixture over the pork chops. Cover with apricot halves, sprinkle with breadcrumbs and dot with butter. Cook in a preheated 325ºF. oven for 45 minutes. Serve with rice and green beans. 4 servings
