Pork Chops in Apple Cider (Cotelettes de porc au cidre - France)
4 thick pork chops
1 tablespoon of butter
1 tablespoon of olive oil
1/2 teaspoon of salt
ground pepper to taste
2 tablespoons of flour
1 1/4 cups of apple cider
1 clove of garlic, crushed
1 teaspoon of rosemary
1 teaspoon of capers
Brown chops in combined hot butter and oil. Cook chops 6 minutes on each side. Remove chops from the skillet and season with salt and pepper. Discard all but 2 tablespoons fat from the skillet. Stir flour into the skillet. Add apple cider, garlic, and rosemary. Simmer sauce for 5 minutes until thickened and slightly reduced. Replace chops. Cover and simmer for 15 minutes. Stir capers into the sauce 5 minutes before serving time. Serves 4. |
