Pork Chops with String Beans
5 slices of bacon 1 large onion, chopped 2 cloves garlic, minced 6 pork chops salt and pepper 2 hot sausages, sliced 1 tablespoon of flour 3 pounds of string beans Salted water Cayenne
Dice the bacon and fry until cooked, but not crisps. Add the onion and garlic, and
sauté until golden brown. Set aside. Season the pork chops with salt and pepper, and brown them in the same pan. Remove the chops and cook the sausages. Remove the sausages and most of the fat. Rub the flour into the pan juices, and take the pan off the heat. Wash and string the beans. Cut them in pieces or leave whole. Cover the beans with boiling salted water, add a dash of cayenne, and cook until the beans are tender. Drain, leaving a scant 1/3 cup of water. Put the bacon onion mixture, the sausage and the chops in a large skillet. Pour the 1/3 cup of bean water over the flour and pan juices, stir around for a few minutes, and pour over the chops. Add the string beans, taste for seasoning, and simmer until most of the water is absorbed, about 10 minutes. Serves 6 |
