Simple Mustard Pork Chops

2 tablespoons of olive oil
1 teaspoon of garlic minced
4 pork chops, approximately 1 inch thick
salt to taste
pepper to taste
1/2 cup of Dijon mustard



Preheat oven to 350ºF. Heat 1 tablespoon of olive oil in a skillet over medium heat. Brown the garlic. Add chops and continue to cook quickly over medium high heat until they begin to brown, adding remaining 1 tablespoon of oil to keep chops from sticking. Season with salt and pepper to taste. Remove from heat and place chops on cookie sheet. Add the mustard to the garlic and oil in skillet. Stir well as mixture cools. Liberally spread half the mustard garlic mixture onto one side of the chops. Bake for 25 minutes. Turn the chops and brush the other side with the remaining mustard garlic mixture. Return to oven and continue cooking for an additional 25 minutes or until thoroughly cooked. Serve warm. Serves 4
