Southern Baked Pork Chops w/Browned Potatoes
four 1/2 inch pork chops
2 tablespoons of oil
1 onion, chopped
1 tablespoon of curry powder
1/2 teaspoon of ginger
1/2 teaspoon of powdered mustard
a dash of cayenne
1/2 teaspoon of ground cardamom
1/4 cup of vinegar
7 or 8 small potatoes
cornstarch
Sauté the onion in the oil, and add the spices and vinegar. Mix well,
cool, and steep the chops sin the marinade for a few hours in the
refrigerator. Drain, and reserve the marinade. Preheat the oven to 325ºF.
Brown the chops on both sides in a little oil. Add 3/4 cup water to the
marinade, and heat. Put the chops in a baking dish, pour the marinade
around them and bake at 325 for 30 minutes.
Peel the potatoes and parboil for a few minutes. Sauté them in butter or
in the same oil the chops were browned in, and season with salt and
pepper. Remove the chops from the oven. Thicken the pan juices with a
little cornstarch mixed with cold water. Add the potatoes and bake 30
minutes longer. Serves 4
