Applesauce Pound Cake
1 cup of skim milk
1 cup of raisins
1 cup of applesauce
1/3 cup of packed brown sugar
1/4 cup of canola oil
1/2 teaspoon of cinnamon and allspice
Salt; (optional)
1/8 teaspoon of nutmeg
2 cups of cake flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1 cup of chopped apples or dates
1/2 cup of chopped walnuts; (optional) |

Preheat oven to 325ºF. In a large bowl, blend the milk, raisins,
applesauce, sugar, oil and spices thoroughly. In another bowl, mix the
flour, baking powder and baking soda. Combine with the wet ingredients.
Fold in the apples or dates. Use Bakers Joy in a 9x4-inch non-stick pan.
Pour in the batter and bake for 1 1/4 hours. Cool on a rack, slice and
serve. Serves 8-10 Per Serving: Cholesterol - Trace, Calories - 214,
