Dill & Sour Cream Potato Salad
3 pounds of unpeeled new potatoes
2/3 cup of mayonnaise
one 8 ounce carton of sour cream
1 tablespoon of chopped fresh dill
2 teaspoons of chopped fresh parsley
1/2 teaspoon of salt
1/2 teaspoon of pepper
Garnish: fresh dill sprig |

Cook unpeeled potatoes in boiling salted water to cover 15 minutes or
until tender; drain and let potatoes cool to touch.
Cut potatoes into eights, leaving skins on. Place in a large bowl.
Combine the mayonnaise and next 5 ingredients. Add potatoes, toss
gently.
Cover and chill 8 hours. Garnish, if desired. Yield: 8 servings
