Quinoa Recipes
> Fruited Quinoa Salad
3 cups of quinoa, cooked
8 3/4 ounce can of apricot halves, drained
1 naval orange, sectioned
1 cup of seedless red grapes, halved
1/4 cup of scallions, sliced
1/4 cup of fresh parsley, chopped
1/4 teaspoon of black pepper
Salt
In a medium bowl, toss quinoa, apricots, oranges, grapes, scallions,
parsley and black pepper. Season to taste with salt, if desired.
