Old Fashioned Ravioli
Tomato Meat sauce
3 cups ( 1 1/2 pounds) of ricotta
1 1/2 tablespoons of chopped parsley
2 eggs, well beaten
1 tablespoon of grated Parmesan cheese
3/4 teaspoon of salt
1/4 teaspoon of pepper
Basic Noodle
Dough
7 quarts of water
Grated Parmesan or Romano cheese
Prepare Tomato Meat sauce.
Mix ricotta, parsley, eggs, 1 tablespoon of grated Parmesan, 3/4
teaspoon of salt and pepper.
Prepare noodle dough. Divide dough in fourths. Lightly roll each fourth
1/8 inch thick to form a rectangle. Cut dough lengthwise with pastry
cutter into strips 5 inches wide. Put 2 teaspoons of filling 1 1/2
inches from narrow end in center of each strip. Continuing along strip,
put 2 teaspoons filling at 3 1/2 inch intervals.
Fold each strip in half lengthwise, covering mounds of filling. To
seal, press the edges together with the tines of a fork. Press gently
between mounds to form rectangles about 3 1/2 inches long. Cut apart
with a pastry cutter and press cut edges of rectangles with times of
fork to seal.
Bring water to boiling in a large saucepot. Add 2 tablespoons of salt.
Add ravioli gradually; cook about half of ravioli at one time. Boil,
uncovered, about 20 minutes or until tender. Remove with slotted spoon
and drain. Put on a warm platter and top with Tomato Meat sauce.
Sprinkle with grated cheese. About 3 dozen ravioli`
Ravioli with Meat filling: Follow recipe for Ravioli. Prepare sauce.
Omit ricotta and parsley. Heat 2 tablespoons of olive oil in skillet.
Add 3/4 pound of ground beef and cook until no pink color remains. Cook
1/2 pound of spinach until tender; drain. Mix spinach and ground beef
with egg mixture. Process as directed.
Tomato Meat sauce
1/4 cup of olive oil
1/2 cup of chopped onion
1/2 pound of ground chuck
1/2 pound of pork shoulder
7 cups of canned tomatoes with liquid, sieved
1 tablespoon of salt
1 bay leaf
one 6 ounce can of tomato paste
Heat the olive oil in a saucepot. Add onion and cook until lightly
browned. Put the meat into saucepot and brown on all sides. Stir in
tomatoes and alt. Add bay leaf., Cover, simmer about 2 1/2 hours.
Mix tomato paste into sauce. Simmer, uncovered, stirring occasionally,
about 2 hours or until thickened. If sauce becomes too thick add 1/2 cup
of water.
Remove meat and bay leaf from sauce. Serve sauce over coked spaghetti.
About 4 cups of sauce
Tomato Sauce with ground meat: Follow recipe for Tomato Meat sauce. When
cooking is almost completed, brown 1/2 pound of ground beef in 3
tablespoons of olive oil, cutting beef into small pieces with a fork or
spoon. After removing, meat from sauce, add ground meat and simmer 10
minutes. |
