Mushroom Sandwich or Canapé Spread
3/4 pounds of mushrooms, about 12 large
1 tablespoon of butter or margarine
1 tablespoon of sherry
1/2 teaspoon of cornstarch
1/4 teaspoon of pepper
2 teaspoons of chopped fresh parsley |

Chop the mushrooms fine. Sauté in butter
or margarine. Remove 1 tablespoon of butter, cool. Lightly blend sherry with
cornstarch. Stir until smooth. Add to mushrooms. Add pepper and cook,
stirring until thick and smooth. Mix in parsley. Chill.
