Swedish Meatballs 15

1 tablespoon of  shortening
1/3 cup of chopped onion
1 pound of ground beef
1/2 pound of ground pork
1 1/2 cups of dry bread crumbs
2 eggs, beaten
1 tablespoon of salt
1 tablespoon of sugar
1/4 teaspoon of  pepper
1/4 teaspoon of nutmeg
3/4 cup of  water or milk
1/4 cup of melted shortening
3 beef bouillon cubes
3 cups of  water
5 tablespoons of  flour
1 1/2 tablespoons of lemon juice
3 bay leaves

Melt shortening in a skillet, add onion and sauté until tender. Combine sautéed onion, meats, dry bread crumbs, beaten eggs, salt, sugar, pepper, nutmeg, and water or milk. Shape into 1 1/2 inch balls, then brown in melted fat in a hot skillet. Remove meat balls from fat Dissolve beef bouillon cubes in water. Blend flour into remaining fat in skillet, add bouillon, water and lemon juice, stirring until thick. Add bay leaves and browned meat balls. Cook slowly for 1 hour. Makes 8 servings.
