Avocado Soup
2 avocados
2 drops of lemon extract
2 cups of chicken broth
1 tablespoon of dry sherry
1 cup of heavy cream
salt, to taste
cayenne pepper, to taste
Peel and pit avocados. Puree in a blender with lemon extract. Blend in
chicken broth and sherry. Pour into a bowl and whisk in cream. Season to
taste with salt and cayenne pepper. Chill. Serves 6. |
