Beef Stew #3
2 pounds of beef stew meat
3 tablespoons of olive oil
1 packet of Sweet 'n Low (optional)
1 celery stalk, diced
1 tablespoon of parsley sprigs, chopped
1 garlic clove, minced
1 whole bay leaf
4 cups of beef stock
3 scallions, chopped
In a large skillet, brown meat in hot olive oil. Put meat into a slow
cooker. Pour beef stock into a sauce pan and bring to a boil. Par boil
the celery, garlic, and scallions for 2 minutes. Pour stock and
vegetables into the slow cooker. Add herbs, cover, and cook on low heat
(do not boil) for 4 -8 hours. Remove bay leaf before serving. Serves 6. |
