Crab Chowder
10 ounces of fresh or frozen cauliflower
1 cup of water
7 ounces of canned crab meat
2 tablespoons of scallions, chopped
2 tablespoons of pimiento
3 cups of heavy cream
3 ounces of cream cheese
1/2 teaspoon of salt
1/2 teaspoon of white pepper
1/2 teaspoon of paprika
In a large sauce pan, heat water until boiling, Add cauliflower and
return to boiling. Cook 2 minutes. Cut up any large pieces. Add cream,
scallions, and pimiento. Heat and stir, just until boiling (do not
boil). Add crab meat, cream cheese, salt pepper, and paprika. Heat until
cream cheese melts and chowder is hot (do not boil). Serves 6. |
