Cheesy Chicken Chowder
1 cup of small broccoli flowerets
1 cup of frozen whole kernel corn
1/2 cup of water
1/4 cup of chopped onion
1/2 teaspoon of dried thyme, crushed
2 cups of milk
1 1/2 cups of chopped cooked chicken
one 10 3/4 ounce can of condensed cream of potato soup
1 cup of shredded cheddar cheese (4 ounces)
a dash of pepper
In a large saucepan combine the broccoli, corn, water, onion
and thyme. Bring to boiling; reduce heat. Cover and simmer
for 8 to 10 minutes or till vegetables are tender. Do not
drain.
Stir milk, chicken, potato soup, 3/4 cup of cheddar cheese,
and pepper into vegetable mixture. Cook and stir over medium
heat till heated through and cheese is melted. Sprinkle with
the remaining cheese. Makes 4 servings |
