Turkey Mushroom Soup
1 pound of cooked turkey
1 cup of mushrooms, chopped
2 scallions. chopped
1/2 cup of red bell pepper, chopped
4 cups of chicken stock
1 tablespoon of white wine
1 tablespoon of butter
1 teaspoon of dried basil
dash of oregano
dash of sage
salt and pepper, to taste
In a large soup pan, melt butter and saute mushrooms, green onions, and
bell pepper until tender but not brown. Add remaining ingredients. Bring
to a boil and reduce heat to lowest setting for 5 minutes. Serves 4. |
